For several months now, the restaurant La Perfumería, located at number 7 Plaza Manises, has been bringing together some of today’s leading chefs—each holding at least one Michelin Guide star—through the #LasEstrellasdeLaPerfumería series. An encounter designed to connect Valencian gastronomic tradition with fresh perspectives from other destinations, all converging in Valencia

Agustín Balbi

Agustín Balbi is a highly acclaimed chef at the helm of Ando in Hong Kong. Ranked as the world’s No. 61 chef and awarded one Michelin Guide star, he has received numerous accolades, including the Best Young Chef in the World 2019 award from La Liste, recognition in the Michelin Guide Hong Kong–Macau 2021, and the Tatler Dining Awards 2022

With Spanish and Italian roots, Balbi has established himself as one of Asia’s most remarkable culinary talents, thanks to a style that fuses Spanish cuisine with techniques and ingredients from Japanese culinary culture, creating a personal approach that represents a genuine meeting of worlds

Rafa De Bedoya

Rafa De Bedoya, a Michelin Guide-starred chef and co-director of Aleia alongside Paulo Airaudo, is renowned for a cuisine that blends his Andalusian roots with Mediterranean ingredients and techniques drawn from major culinary traditions, including French and Asian

JOSE CARLOS GARCÍA

José Carlos García, a Michelin Guide-starred chef and holder of two Repsol Suns at his eponymous restaurant in Puerto de Málaga, is renowned for his innovative technique and daring reinterpretation of traditional Andalusian cuisine.

During his participation in the ‘Las Estrellas de La Perfumería’ series in Valencia, García presented an eleven-course paired menu, featuring creations such as Quisquillas with pepper juice and dill yogurt, and Crème Brûlée with liquorice and honey, establishing himself as one of the most creative and prominent voices in Spanish gastronomy.

RAFA SOLER


Xune Andrade, a young chef from a small Asturian village, develops a cuisine deeply rooted in his region, drawing inspiration from the products and culture of Asturias’ mining basin. During his participation in the ‘four hands’ series at La Perfumería, Andrade brought his rural yet contemporary approach to a historic setting, creating a collaborative tasting menu with the restaurant’s team. His creations stand out for reinterpreting local ingredients such as smoked butter, pork cold cuts with sauerkraut, pea tartlets, and trout roe, blending his Asturian vision with La Perfumería’s Mediterranean tradition.

Mauricio Giovanini, head chef of Messina, holds a Michelin Guide star, a Repsol Suns, and accolades including Best Restaurant in Málaga and Best Chef by the Málaga Gastronomic Academy. After training in gastronomy in Córdoba, Argentina, he moved to Spain in 2002 and opened Messina in 2003, establishing a high-quality cuisine in which natural juices play a starring role. Giovanini is celebrated for his ability to combine technique and creativity, delivering innovative dishes that shine in events such as the ‘four hands’ menus with La Perfumería.

Soler presented a special paired menu, crafted to bring the essence of his renowned restaurant cuisine to Valencia, as part of the ‘Guest Chef’ series, which brings together distinguished Michelin Guide-starred chefs to create unique gastronomic experiences in a distinctive setting.
